Abi’s Viral Chicken Salad
Makes 7 servings. About 1 hour.
I don’t throw the word viral around lightly, but I don’t think I’ve ever been asked for a recipe more than this one. It’s crunchy, fresh, ridiculously good, and one of the easiest things to make on Sunday and eat all week. The grapes are non-negotiable. The homemade mayo is worth the extra two minutes. Trust me. I have also never made this for someone who did not ask me for the recipe afterward. Every single time. It has been passed around enough at this point that I am not sure anyone remembers where they got it.

- I used a large crockpot to cook the chicken but you can bake it or boil it. Make sure not to overcook the chicken. The trick is letting it rest so the juices settle before shredding it.
- I added salt and cooked it in the Crock pot and covered it for 30 minutes to let it rest.
- Shred the chicken
- Add everything else
- Let sit in the fridge
