The Herbal Tea That Beat Hundreds

Before my sister Emily and I launched our tea company, we tasted hundreds of teas. Hundreds! It felt like being a kid in a candy shop.

We’d brew them in batches in my kitchen and taste each one at different points in the steep, at one minute, then two, then three, because the exact same tea can taste completely different depending on how long you let it sit.

Little by little we narrowed the pile down to about 50 blends we really loved, and then we launched them three at a time. Golden Citrus Tonic made that very first cut. It was one of our original three.

Years later, it’s still one of my favorites. It’s spicy and citrusy and so good with a little honey and lemon, especially once the mornings start getting cold.

I don’t own the tea company anymore, but I have a feeling this one will always taste like those afternoons in the kitchen with Emily, surrounded by mugs and arguing over which steep time was best. If you want to make it the way I do, steep it for 3 to 5 minutes, then add honey and a squeeze of lemon.
