Dirty Herbal Chai Latte

Every year the second it starts getting dark before dinner, I want something warm in my hands, and this is the drink I keep coming back to. It’s herbal chai steeped good and strong, a teaspoon of Postum stirred in, then cream and sugar until it tastes like something worth sitting down for. The Postum is what makes it dirty, that roasty, almost-coffee depth without the caffeine, so I can have one at three in the afternoon or nine at night and it doesn’t cost me anything.

It takes about seven minutes start to finish, most of that just waiting on the tea, and I’ve come to like that part too. Steep it six minutes, strain it, stir in the Postum, splash of cream, sugar to taste. That’s it. Make one, put on a sweater, go stand by a window for a minute. That’s the whole fall feeling right there, and it’s a lot cheaper than a drive-thru.
